Food, the substance, the lover and the art form
Food is not just a substance that keeps me alive; No food is
more important than that. For me food is very important because it can be used
for so many different things. Although I do enjoy various foods, my desire for
it is not in the sensual manner like Anthony Bourdain , but in a more plutonic
way. One of the main reasons that my relationship with food is not at the same
level as Anthony Bourdain, or many other chefs for that matter, is because I
have been scared by food. About six years ago, I was made ill by a spoiled
slab of ribs and ever since that moment I have abstained from eating meat.
Being a vegetarian, was one of the best decisions that I could have made,
besides the fact that I feel healthier; being a vegetarian has not only
given me new perspective on food it has also allowed for greater admiration
for cooking.
Cooking for me is more than the mundane task of just
putting the food together. This is because I have been indoctrinated with
cooking since I was very young. My family in Florida loves to cook, they also
enjoy growing and catching a lot of the items that they cook. I can remember
when I was about ten years old and my Grandparents took me out fishing, and we
were out fishing all night and I caught a yellow tailed snapper. Once we came
back I had to scale and prepare the fish for dinner and once I finished cleaning
the fish I then had to prepare the vegetables by cleaning the greens and
snapping the peas. Ever since that experience of making my own food I have been
eager to cook or at least help prepare with the cooking. For me cooking is an
art form, a delicate process. Cooking is one big experiment. There's the
hypothesis, which is what is supposed to be made; then there's the procedure
which is following the directions and adding a little bit of flavor, personal
touch, into the food and finally there is the result, which is the completion
of experiment. For me the joy of cooking, as well as food in that manner, is
the result; when at the end what is made could be something new and
completely different from the original objective.
